DIY: Replacing the Rotor disc on Girodisc 2-piece brake rotor

I've helped a number of people replace their existing stock rotors with Girodisc 2-piece rotors. I've used them on three different cars of mine. Great for track and street, they last. long time and provide a bit of extra surface area for better brake performance. When. your Girodisc rotors later wear out, you can replace the rotor disc with a new one, keeping the rotor hat. That makes the brake rotor replacement a bit cheaper.  Here is a video showing how to do the rebuild / replacement, in. this case on my 2018 Mustang Shelby GT350R:
